Slow Cooker Sloppy Joes


We tried these this week and they turned out so good! Delicious! Justin kept raving about them, which is always good. This recipe came from the taste of home website.

  • 2 pounds ground beef
  • 1 cup chopped green pepper
  • 2/3 cup chopped onion
  • 2 cups ketchup
  • 2 envelopes sloppy joe mix
  • 2 tablespoons brown sugar
  • 1 teaspoon prepared mustard
  • 12 hamburger buns, split

In a large skillet, cook the beef, pepper and onion over medium heat until meat is no longer pink; then drain. Stir in the ketchup, sloppy joe mix, brown sugar and mustard.

Transfer to the crockpot. Cover and cook on low for 4-5 hours or until flavors are blended.

Baked Creamy Chicken Taquitos


I have seen this recipe floating around on many different cooking sites and friends blogs. We decided to try it the other night and it was to die for we loved it. We got the recipe from Ginas Skinny Recipes which is also the same recipe from Our Best Bites. Definitely worth trying! 

1/3 C (3 oz) cream cheese
1/4 C green salsa
1T fresh lime juice
1/2 t cumin
1 t chili powder
1/2 t onion powder
1/4 t granulated garlic, or garlic powder
3 T chopped cilantro
2 T sliced green onions
2 C shredded cooked chicken
1 C grated pepperjack cheese

small corn tortillas/ Fajita flour tortillas
kosher salt
cooking spray

Heat oven to 425. Line a baking sheet with foil and lightly coat with cooking spray.

Heat cream cheese in the microwave for about 20-30 seconds so it’s soft and easy to stir. Add green salsa, lime juice, cumin, chili powder, onion powder and granulated garlic. Stir to combine and then add cilantro and green onions. Add chicken and cheese and combine well.
You can prepare up to this step ahead of time. Just keep the mixture in the fridge. 

Work with a few tortillas at a time and heat in the microwave until they are soft enough to roll without cracking. It helps to place them between damp paper towels. 

Place 2-3 T of chicken mixture on the lower third of a tortilla, keeping it about 1/2 inch from the edges.
Roll up as tight as you can with the seam side down and sprinkle with kosher salt.

Place pan in oven and bake for 15-20 minutes or until crisp and the ends start to get golden brown

Honey-lime Chicken Enchiladas


This recipe comes from the cookbook called Keeping Up Cookbook. These enchiladas have such a great taste to them. I love making these! 
1/2 cup honey
1/4 cup lime juice
1 T chili powder
1/2 tsp garlic powder
1 1/2 pounds chicken, cooked and shredded 

Stir together honey, lime juice, chili powder and garlic powder until combined. Add chicken and let it sit in marinade for at least 30 minutes. 

2 (10 ounce) cans green enchilada sauce
1 cup half & half
flour tortillas
shredded colby jack cheese

Mix enchilada sauce with half & half. Spread roughly 3/4 cup of the sauce in the bottom of a 9 X 13 baking dish. Fill flour tortillas with marinated chicken and shredded cheese, roll-up, then place side by side in a baking dish. Pour remaining enchilada sauce over the top of the enchiladas and top with more cheese. Bake at 350 degrees for 25 to 30 minutes.


Spicy Chicken Pasta

When I lived in Salt Lake my mom would make this meal quite frequently. This recipe came from my moms friend Linda and everyone in our family loves this recipe.

4 boneless-skinless chicken breasts, cut into bite size pieces
1 onion, diced
1 green bell pepper, diced
1 red bell pepper, diced
1 (12 oz) pkg, fettuccine, cooked as directed on package

Sauce
3/4 cup soy sauce
1 cup sugar or 1 cup honey
2 T oil
1 clove of garlic
1/4 tsp fresh ground ginger
Crushed red pepper flakes (1/2 tsp = med, 1 tsp = hot)

Mix sauce ingredients. Coat chicken pieces with small amount of sauce and stir-fry in wok or large frying pan, in small amount of oil. Add onions and peppers and cook until chicken is done and pepper are crisp-tender. Add cooked and drained fettuccine to chicken, peppers and onions. Pour sauce and stir and cook until hot.


BBQ Meatballs


I got this amazing recipe from my friend Emily. Ever since I made it Justin keeps requesting it. He told me its a meal I could make 2 to 3 times a week and he would love it. For right now once a week will have to do. We love this recipe and its definitely worth trying. Yum :) 

1-1.5lbs lean Ground Beef
3/4 cup Oats
2 Eggs
1/2 chopped onion or 2 TBS dried onions (i didn't use these)
1/2 cup Milk
1 tsp Salt
1/4 tsp Pepper
1 tsp Worcestershire Sauce

Mix together and make into 12 balls
Place in a 9 x 13 glass baking dish

Sauce:
1/2 cup brown sugar
1/4 cup vinegar
1 tsp ground mustard
1/4 cup barbecue sauce
1 tsp Worcestershire Sauce

(I doubled the sauce cause Emily recommended it! Definitely worth doubling it)

Mix sauce together and simmer 5 minutes
Then pour the sauce over meatballs and bake 30-45 minutes at 350

Spaghetti Pie

This recipe comes from my mom and is definitely a family pleaser! 

6 oz spaghetti
2 T. butter
2 eggs, beaten
1/3 cup grated parmesan cheese
1 cup small curd cottage cheese
1 lb hamburger, cooked and drained
1 jar Ragu spaghetti sauce
Grated mozzarella cheese or cheddar cheese


Cook and drain the spaghetti, do not rinse. Stir butter into hot spaghetti until melted. Stir in eggs and Parmesan cheese. Form spaghetti mixture into a crust in a greased pie pan/plate. Fill with cottage cheese. Heat together cooked hamburger and spaghetti sauce; pour over cottage cheese. Cover edges with foil. Bake at 350 for 20 minute. Then sprinkle with grated cheese and bake 5 more minutes or until cheese melted. Cut into wedges and serve.
