I found this recipe in the real simple magazine. Justin and I love lettuce wraps so we tried these out and they were really good! I hope you think the same.
3 T low sodium soy sauce
3 T honey
2 T canola oil
1 1/2 lb boneless skinless chicken breasts (cut into 3/4 inch pieces)
Pepper
2 cloves garlic, finely chopped
1 T grated ginger
1 bunch scallion, trimmed and sliced
1 8-ounce can sliced water chestnuts, drained
1/4 cup roasted unsalted cashews
1 small head lettuce, leaves separated
Combine the soy sauce and honey in a small bowl and set aside
Heat the oil in a large skillet over medium high heat, season the chicken with pepper and cook until is begins to brown
Lower heat to medium and stir in the garlic and ginger. Add the scallions and cook for 1 minute. Stir in the water chesnuts and half the soy sauce mixture and continue to cook until the chicken is cooked through, about 4 minutes. Remove from heat and sprinkle with cashews.
Serve the chicken mixture over the lettuce wraps and drizzle with the remaining soy sauce mixture.
