White Chicken Chili


I have always loved this recipe that my mom makes. It is a regular at our house. This recipe is so quick and easy. Not to mention delicious! 

4 chicken breasts, cubed and uncooked
1 large clove garlic, minced
1 large onion, chopped
2 (4 oz) cans green diced chilies
2 (15 oz) cans great northern beans with juice
2 pkg frozen shoepeg white corn in butter sauce, thawed
1 tsp cumin
3 T lime juice, bottled
Grated cheese
Sour cream

Put teaspoon of oil in pan, add onion and garlic and saute until unions are soft. Add raw diced chicken and cook until chicken is opaque or done. Add remaining ingredients except cheese and sour cream. Bring to boil and simmer 5 minutes. To serve, sprinkle cheese on top and add a dollop of sour cream.
